What is the mogroside?
Mogroside is a low-calorie sweetener and is the main active ingredient in Siraitia grosvenorii. it is made from Siraitia grosvenorii by boiling, extracting, concentrating and drying. the molecular structure of mogroside is shown in the following figure.
What is the advantages of mogroside as Sweetener?
1.Application advantages: mogroside has high sweetness, low calorie, no bad flavor, light color, good water solubility and stability, is stable in 100 ℃ neutral aqueous solution, is not damaged after long-term heating in 120 ℃ air, is a non-fermented substance, is not easy to mildew, and is not affected by pH value ( pH value between 2 and 10 ) during use.
2.Efficacy Advantage: mogroside is a traditional Chinese medicine and food homologous plant, originating in tropical and subtropical mountainous areas such as Guangxi, Guangdong, Hunan and Jiangxi, and has a history of more than 300 years in Guangxi folk medicine. Traditional medicine believes that momordica grosvenori can moisten lung, relieve cough, cool blood and relax bowels. Modern pharmacological studies have confirmed that momordica grosvenori has the pharmacological effects of relieving cough and eliminating phlegm, regulating digestive tract movement, enhancing immunity, resisting oxidation, protecting liver and inhibiting caries caused by streptococcus mutans. Many in vitro experiments, cell experiments and animal experiments show that a certain dose of mogroside also has the effects of eliminating phlegm, relieving cough, resisting inflammation and bacteria, scavenging free radicals, resisting oxidation, lowering blood sugar, protecting liver and enhancing immunity. 3.Application Status: China approved the product as a food additive in 1996, which can be used as a sweetener to replace sucrose in part or in whole and widely used in various foods, especially as a substitute sugar for obesity and diabetes patients. In January 2017, the national food additive mogroside for food safety was officially implemented. The FDA approved the application of mogroside in food in 2002. At present, countries that allow mogroside to be used as food additive include Japan, South Korea, Thailand, Singapore and the United Kingdom.
In addition to being a natural sweetener, many manufacturers have also developed a variety of food and dietary supplements, such as throat lozenges, beverages, granules and so on, using mogroside.

At present, mogroside food processing industry mainly embodies the production of mogroside extracts such as mogroside glycosides and mogroside extracts, the baking and sale of mogroside raw fruits, and some low-end convenient foods with more traditional mogroside flavor such as ointments, sugar, lumps, granules, tea, beverages, etc., with a single industrial structure and simple product types. In the future, the focus of food development can increase the added value of mogroside products and make use of the functional characteristics of mogroside to develop the application of mogroside from traditional food to functional healthy new food.
